Cold Soba Salad with Cilantro Sauce

For the noodles

8 ounces uncooked soba (Japanese buckwheat noodles)
1 tablespoon light olive oil
2 teaspoons sesame oil
1 tablespoon mild vinegar (such as rice or white wine)
2 tablespoons natural soy sauce
2 tablespoons sesame seeds, optional
Cilantro Sauce (below)

1. Cook the noodles in rapidly bowling water until al dante. Drain and rinse under cold running water to cool, then drain well.

2. Add the remaining ingredients, except the Cilantro Sauce, and toss together.

For the sauce

3/4 cup cilantro leaves (or parsley or a combination)
2 tablespoons cashew, almond or peanut butter
1 tablespoon lemon or lime uice, rice vinegar, or other mild vinegar
pinch of salt

Combine all the ingredients in a food processor with 1/4 cup water. Process until fairly smooth but not completely pureed. Transfer to a small bowl. Pass around to serve over noodles.
